Chorizo and Beef Queso Recipe
This isn't your typical queso. Made with cottage cheese for a creamy, protein-packed cheese sauce, it's hearty enough to enjoy as a satisfying lunch or dinner with a handful of tortilla chips.
Ingredients
1/2 Bottle (5 oz) of Chili Crush - Green
1 pound lean ground beef
1 pound ground chorizo
1/2 yellow onion (chopped)
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 Bottle of Dash Extra Spicy Seasoning (salt free)
Ingredients For Blender
32 oz cottage cheese (2% milkfat)
8 oz block pepper jack cheese (cut into large chunks)
8 oz shredded Mexican cheese blend (or shredded cheddar)
4 oz Velveeta original (cut into large chunks)
2 Taco Seasoning Packets (or enough to season 1 pound of beef)
1 ¼ cups water
Directions
Combine all of the blender ingredients into a blender and blend on high for 30 seconds. Scrape down the edges with a spatula and blend again until smooth.
In a pot or a large pan, cook the ground beef, chorizo, and onion with the salt and garlic powder over medium/high heat until browned and no longer pink. If there is excessive oil then drain.
Turn the heat down to medium/low and pour the blended cheese sauce over the beef/chorizo/onion. Stir to combine.
Pour in 1/2 bottle of Dash Extra Spicy Seasoning. Continue to stir.
After the cheese sauce has warmed (roughly 5 minutes), pour in the 1/2 bottle of Chili Crush Green. Stir to combine.
Serving
Serve with your favorite tortilla chips or veggies and enjoy! You can also pour the queso into a crock pot and set to low/warm. This also reheats well in the microwave.
